  • vanilla bean (1)
  • saffron threads (a pinch)
  • goat cheese (100g)
  • pistachios (50g)
  • honey (2 tbsp)

  • fine mesh strainer
  • mixing bowl

To begin, slice the purple potatoes thinly using a mandoline slicer to achieve uniform thickness. In a medium saucepan, combine the sliced potatoes with the seeds scraped from the vanilla bean and saffron threads. Add enough water to cover the potatoes and bring to a gentle simmer. Allow the potatoes to cook until tender, then drain them using a fine mesh strainer.
