Ingredients:

  • 1 can (400g) canned chickpeas, drained and rinsed
  • 1/2 cup (120g) peanut butter
  • 1/4 cup (85g) honey
  • 1 tsp (5ml) vanilla extract
  • 1/2 tsp (2g) baking powder
  • 1/4 tsp (1g) salt
  • 1/2 cup (90g) chocolate chips

Kitchen Tools:

  • baking sheet

Start by preheating your oven to 350°F (180°C) and lining a baking sheet with parchment paper. In a food processor, blend the drained and rinsed chickpeas until smooth. Add in the peanut butter, honey, vanilla extract, baking powder, and salt. Blend until all the ingredients are well combined and you have a thick dough-like consistency.

Transfer the mixture to a mixing bowl and fold in the chocolate chips until evenly distributed. Using a spoon or cookie scoop, portion out the dough onto the prepared baking sheet, leaving some space between each cookie.

Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
