Hey there, foodies! Today I’m excited to share a brand-new recipe that I whipped up in my kitchen recently. I was feeling adventurous and wanted to try something completely unique and unexpected. This dish combines flavors and textures in a way that will surprise and delight your taste buds. So, let’s get cooking!

Ingredients:

  • purple sweet potatoes (300g)
  • kiwifruit (100g)
  • miso paste (20g)
  • coconut milk (200ml)
  • hazelnuts (50g)

Kitchen Tools:

  • chef’s knife
  • cutting board
  • potato masher
  • saucepan
  • blender

I start by peeling and chopping the purple sweet potatoes into chunks before boiling them until tender in a saucepan. In another pot, I heat coconut milk and miso paste until the miso is fully dissolved. I then blend the sweet potatoes with the miso coconut milk mixture until smooth and creamy.

Next, I peel and slice the kiwifruit into thin rounds and toast the hazelnuts in a dry pan until fragrant. To serve, I spoon the purple sweet potato puree into a bowl, top it with the sliced kiwifruit, and sprinkle with the toasted hazelnuts for crunch.

This unique dish has a vibrant purple color from the sweet potatoes, a slight tanginess from the miso, a tropical sweetness from the kiwifruit, and a nutty finish from the hazelnuts. It’s a perfect blend of savory and sweet flavors that will leave you wanting more.

The total weight of the cooked dish is approximately 700g, with 4 servings at 175g each. One serving is estimated to be around 250 calories.

One tip to make this dish even more special is to sprinkle some black sesame seeds on top for a bit of extra crunch and a pop of color.
