Ingredients:

  • 2 ripe pears (about 300g)
  • 1 large onion (about 150g)
  • 2 garlic cloves
  • 1 liter vegetable broth
  • 400ml coconut milk
  • a handful of fresh sage leaves
  • 2 tablespoons of olive oil
  • salt and pepper to taste

To start, heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent. Next, add the diced butternut squash and chopped pears to the pot, along with the fresh sage leaves. Cook for a few minutes until the vegetables begin to soften and release their aromas.

Pour in the vegetable broth and bring the mixture to a gentle boil. Reduce the heat and let the soup simmer for about 20-25 minutes, or until the butternut squash is fork-tender. Remove the pot from the heat and use an immersion blender to puree the soup until smooth.

Stir in the coconut milk and season the soup with salt and pepper to taste. Return the pot to the stove and heat the soup through. Once heated, your butternut squash and pear soup is ready to serve.
