Today’s Unique Autumn Recipe: Butternut Squash and Pear Soup

Autumn is the perfect season for comforting soups that warm you up from the inside out. Today, I’m excited to share a unique recipe for butternut squash and pear soup that combines the earthy sweetness of butternut squash with the juicy, floral notes of ripe pears. This unexpected pairing creates a velvety smooth soup that is both comforting and refreshing.

Ingredients:

  • 1 medium butternut squash (about 800g)
  • 2 ripe pears (about 300g)
  • 1 large onion (about 150g)
  • 2 garlic cloves
  • 1 liter vegetable broth
  • 400ml coconut milk
  • a handful of fresh sage leaves
  • 2 tablespoons of olive oil
  • salt and pepper to taste

Kitchen Tools:

  • chef’s knife
  • cutting board
  • large pot
  • immersion blender

To start, heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent. Next, add the diced butternut squash and chopped pears to the pot, along with the fresh sage leaves. Cook for a few minutes until the vegetables begin to soften and release their aromas.

Pour in the vegetable broth and bring the mixture to a gentle boil. Reduce the heat and let the soup simmer for about 20-25 minutes, or until the butternut squash is fork-tender. Remove the pot from the heat and use an immersion blender to puree the soup until smooth.

Stir in the coconut milk and season the soup with salt and pepper to taste. Return the pot to the stove and heat the soup through. Once heated, your butternut squash and pear soup is ready to serve.

This recipe makes approximately 6 servings, with each serving weighing around 350g. One serving of this creamy soup is estimated to have about 250 calories.

For a unique twist on this classic soup, try garnishing each bowl with a sprinkle of toasted pumpkin seeds or a drizzle of balsamic glaze. The crunch and acidity will add an extra layer of flavor to the dish.

I hope you enjoy making and savoring this butternut squash and pear soup as much as I do. Feel free to customize the recipe to your liking by adjusting the seasonings or experimenting with different herbs. Happy cooking!
