Fall Comfort Food: Creamy Pumpkin Sage Risotto

Today, I’m excited to share a cozy and comforting fall recipe that always brings warmth to my kitchen. This creamy pumpkin sage risotto is the perfect dish to enjoy during the cooler months, with its rich flavors and velvety texture.

Ingredients:

  • 300g Arborio rice
  • 200g pumpkin puree
  • 20g fresh sage leaves
  • 1L chicken or vegetable broth
  • 2 shallots, finely chopped
  • 2 cloves of garlic, minced
  • 50g Parmesan cheese, grated
  • 50g butter
  • 2 tbsp olive oil
  • To taste

Kitchen Tools:

  • saucepan
  • wooden spoon
  • chef’s knife
  • grater

To start, heat the chicken or vegetable broth in a saucepan over low heat. In another saucepan, heat the olive oil and butter over medium heat. Add the shallots and garlic, cooking until soft and translucent.

Next, add the Arborio rice to the saucepan and toast it for a few minutes until it becomes slightly translucent. Then, begin adding the warm broth one ladle at a time, stirring constantly until the liquid is absorbed before adding more. This process will take about 18-20 minutes.

After about 15 minutes, stir in the pumpkin puree and continue adding broth until the rice is cooked to al dente. Season with salt and pepper to taste. Remove from heat and stir in the grated Parmesan cheese.

In a separate pan, melt a knob of butter and fry the fresh sage leaves until crispy. Remove from the pan and drain on a paper towel.

To serve, spoon the creamy pumpkin sage risotto onto plates and top with the crispy sage leaves. Enjoy this comforting fall dish with a sprinkle of extra Parmesan cheese on top.
