Today, I’m excited to share with you a unique recipe for Roasted Squash and Brussels Sprout Gratin that combines the rich flavors of autumn vegetables with a creamy and indulgent cheese sauce.

To start, you’ll need the following ingredients:

  • 1 small butternut squash, peeled and cubed
  • 200g Brussels sprouts, trimmed and halved
  • 1 shallot, thinly sliced
  • 2 cloves of garlic, minced
  • 250ml heavy cream
  • 100g Gruyere cheese, grated
  • 50g Parmesan cheese, grated
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Salt and pepper to taste

For this recipe, you’ll need the following kitchen tools:

  • baking dish
  • saute pan
  • whisk

Begin by preheating your oven to 400°F (200°C) and greasing a baking dish with butter. In a sauté pan, heat the olive oil over medium heat and cook the shallot and garlic until softened. Add the cubed butternut squash and Brussels sprouts to the pan, then season with salt, pepper, and fresh thyme. Cook for about 5-7 minutes until the vegetables are slightly tender.

In a separate saucepan, heat the heavy cream over low heat until warm. Slowly whisk in the grated Gruyere and Parmesan cheese until melted and smooth. Season the cheese sauce with salt and pepper to taste.

Transfer the cooked vegetables to the greased baking dish and pour the cheese sauce over the top. Sprinkle with additional grated Parmesan cheese and bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
