Hey there, foodies! Today, I’m excited to share a new recipe that I whipped up in my kitchen — Rainbow Risotto. This colorful and flavorful dish is perfect for bringing some joy to your dinner table on a gloomy day. The vibrant hues of the vegetables make this dish as visually appealing as it is delicious.

For this recipe, you’ll need the following ingredients:

  • Arborio rice (300g)
  • Vegetable broth (1 liter)
  • Carrots (2, diced)
  • Beets (1, grated)
  • Spinach (100g, chopped)
  • Parmesan cheese (50g, grated)
  • Butter (2 tbsp)
  • Onion (1, finely chopped)
  • Garlic (2 cloves, minced)
  • White wine (125ml)
  • Salt and pepper to taste

To bring this dish to life, you’ll need the following kitchen tools:

  • Large saucepan
  • Wooden spoon
  • Grater
  • Chef’s knife
  • Cutting board

Start by heating the vegetable broth in a large saucepan. In another saucepan, melt the butter and sauté the onion and garlic until they are soft and fragrant. Add the Arborio rice to the saucepan and toast it for a few minutes until it becomes slightly translucent.

Next, pour in the white wine and stir until it has been absorbed by the rice. Begin adding the hot vegetable broth to the rice one ladle at a time, stirring continuously. Allow the broth to be absorbed before adding the next ladle.

As the risotto cooks, add the diced carrots to the pan, followed by the grated beets. The beets will give the risotto a beautiful pink hue. Continue stirring and adding broth until the rice is creamy and al dente.

Finally, stir in the chopped spinach and grated Parmesan cheese. Season with salt and pepper to taste. Remove the pan from the heat and let it sit for a few minutes to allow the flavors to meld together.

Once ready, serve the Rainbow Risotto hot, garnished with some extra Parmesan cheese on top. This dish not only tastes amazing but also looks like a work of art on your plate.

This colorful Rainbow Risotto weighs approximately 1200g in total and serves four people. Each serving is around 300g, with an estimated calorie count of 400 per portion.

A unique tip for this recipe is to reserve a little of the grated beets and carrots to sprinkle on top of each serving before serving. This adds an extra pop of color and freshness to the dish.
