I’m thrilled to share my latest creation with you today — a vibrant and flavorful Roasted Cauliflower Steak with Chimichurri Sauce. This dish is perfect for those craving a hearty and satisfying meal that’s both plant-based and bursting with bold flavors.

Ingredients:

  • cauliflower
  • olive oil
  • smoked paprika
  • garlic powder
  • salt
  • black pepper
  • fresh parsley
  • fresh cilantro
  • garlic
  • red wine vinegar
  • red pepper flakes
  • olive oil

Kitchen Tools:

  • chef’s knife
  • blender
  • mixing bowl

To start, preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Trim the leaves and stem of the cauliflower, then slice it vertically into 1-inch thick steaks. In a small bowl, combine olive oil, smoked paprika, garlic powder, salt, and black pepper. Brush the cauliflower steaks with the oil mixture and place them on the prepared baking sheet. Roast in the oven for 25-30 minutes, or until golden brown and tender.

While the cauliflower is roasting, prepare the chimichurri sauce. In a blender, combine parsley, cilantro, garlic, red wine vinegar, red pepper flakes, and olive oil. Blend until smooth, then season with salt to taste.

Once the cauliflower steaks are done, transfer them to a serving platter and drizzle with the chimichurri sauce. Serve hot and enjoy the vibrant flavors of this unique dish.
