I wanted to recreate those vibrant tastes in a dish that is both refreshing and comforting, perfect for any time of year.

Ingredients

  • 400ml coconut milk
  • 2 stalks lemongrass, finely chopped
  • 50g ginger, grated
  • 500g boneless, skinless chicken thighs
  • 2 large carrots, thinly sliced
  • 200g rice noodles
  • 1 lime, juiced
  • Handful of fresh cilantro, chopped
  • 1 red chili, sliced
  • Salt and pepper, to taste

Preparation

Start by heating a large pan over medium heat. Add the lemongrass and ginger, sautéing until fragrant. Then, add the chicken thighs and cook until browned on all sides. Next, pour in the coconut milk and bring to a simmer. Let the flavors meld together for about 20 minutes.

While the chicken cooks, prepare the rice noodles according to the package instructions. Once cooked, drain and set aside. Add the carrots to the pan with the chicken and coconut milk, letting them soften slightly.

Assembly

To serve, place a portion of rice noodles in a bowl and ladle the fragrant coconut chicken over the top. Squeeze fresh lime juice over the dish and garnish with chopped cilantro and sliced chili for an extra kick of heat. Season with salt and pepper to taste.

Tips

For a flavorful twist, marinate the chicken thighs in a mixture of soy sauce, garlic, and honey before cooking. This will add an additional layer of umami and sweetness to the dish.
