Ingredients

– 250g firm tofu, cubed
– 1 medium-sized dragon fruit, peeled and diced
– 1 lemongrass stalk, minced
– 1 red bell pepper, sliced
– 100g snow peas
– 2 tbsp tamari sauce
– 2 tbsp coconut oil
– Fresh cilantro for garnish
– Salt and pepper to taste

Preparation

Start by heating coconut oil in a wok over medium heat. Add in the minced lemongrass and sauté until fragrant. Toss in the cubed tofu and cook until lightly browned on all sides.

Next, add in the diced dragon fruit, sliced red bell pepper, and snow peas. Stir-fry the mixture for a few minutes until the vegetables are tender-crisp.

Pour in the tamari sauce and season with salt and pepper to taste. Continue to stir-fry everything together until well combined.

Serving
