The combination of sweet dragonfruit and aromatic basil creates a surprisingly delicious treat that is sure to impress your taste buds.

Ingredients

  • 1 medium dragonfruit (about 200g)
  • 1 cup fresh basil leaves (about 30g)
  • 1/2 cup sugar (100g)
  • 1/2 cup water (120ml)

Preparation

Start by peeling and cutting the dragonfruit into small chunks. Place the dragonfruit chunks in a blender along with the fresh basil leaves. Blend on high speed until smooth.

Next, combine the sugar and water in a saucepan over medium heat. Stir until the sugar is dissolved, then remove from heat and let it cool to room temperature.

Once the sugar syrup has cooled, strain the dragonfruit and basil mixture through a fine mesh strainer into a large bowl. Press down on the solids to extract as much liquid as possible.

Add the sugar syrup to the strained dragonfruit and basil mixture and stir until well combined. Pour the mixture into a shallow dish and cover with plastic wrap. Place in the freezer for at least 4 hours, or until firm.

Serving

When ready to serve, use an ice cream scoop to scoop out the dragonfruit basil sorbet into bowls or cones. Garnish with fresh basil leaves for an extra pop of flavor.

Tips

For an extra burst of flavor, try adding a squeeze of fresh lime juice to the sorbet mixture before freezing. The citrusy tang pairs beautifully with the sweet dragonfruit and aromatic basil.
