Today, I’m excited to share a recipe that was inspired by a recent visit to a local farmers’ market. The vibrant colors and fresh produce sparked my creativity, leading to the creation of a unique dish that perfectly showcases the flavors of the season.

Ingredients

  • 1 small head of purple cauliflower (300g)
  • 200g sunchokes
  • 1 dragonfruit
  • 50g pistachios
  • 100g goat cheese
  • 2 tbsp honey
  • 3 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste

Preparation

I start by preheating the oven to 400°F (200°C). Next, I cut the purple cauliflower into florets and slice the sunchokes into thin rounds. I toss them with olive oil, salt, and pepper before spreading them out on a baking sheet to roast for 25-30 minutes, until golden brown and tender.

While the vegetables are roasting, I prepare the dragonfruit by scooping out the flesh and pureeing it in a food processor. I then crumble the goat cheese and chop the pistachios.

Once the vegetables are done, I assemble the dish by arranging the roasted cauliflower and sunchokes on a large platter. I drizzle the dragonfruit puree and honey over the top, then sprinkle with goat cheese, pistachios, and a pinch of black pepper.

Tips

For an extra burst of flavor, try roasting the pistachios for a few minutes before adding them to the dish. The warmth will enhance their nutty taste and add a delicious crunch to each bite.

Serving

This colorful and vibrant dish weighs approximately 800g once cooked. It serves 4 people, with each serving weighing around 200g. Each serving is approximately 300 calories.
