Today, I’m excited to share a dish that brings together the vibrant colors and flavors of fall in one delicious pasta recipe. As the leaves start to change and the air turns crisp, this golden harvest pasta is the perfect way to celebrate the season and enjoy a cozy meal with loved ones.

For this recipe, you will need the following ingredients:

  • butternut squash (diced) – 400g
  • brussels sprouts (halved) – 250g
  • pecans (chopped) – 100g
  • dried cranberries – 50g
  • fettuccine pasta – 300g
  • olive oil
  • salt and pepper

Prepare your kitchen tools:

  • baking sheet
  • large pot
  • skillet
  • mixing bowl

Start by preheating your oven to 400°F (200°C) and lining a baking sheet with parchment paper. Toss the diced butternut squash and halved brussels sprouts with olive oil, salt, and pepper, then spread them out on the baking sheet. Roast in the oven for 25-30 minutes until they are tender and slightly caramelized.

While the vegetables are roasting, cook the fettuccine pasta according to package instructions in a large pot of salted boiling water. Drain the pasta and set aside.
