  • rainbow soba noodles – 200g
  • purple cabbage, thinly sliced – 150g
  • carrots, julienned – 100g
  • bell peppers, assorted colors, sliced – 150g
  • edamame beans, shelled – 100g
  • fresh cilantro, chopped – 30g
  • cashews, toasted – 50g
  • orange, zest and juice – 1
  • olive oil – 50ml
  • honey – 15ml
  • salt and pepper, to taste

Next, grab these kitchen tools:

  • saucepan
  • strainer
  • large mixing bowl
  • zester
  • chef’s knife
  • cutting board

Start by cooking the rainbow soba noodles according to package instructions in a saucepan. Once cooked, drain and rinse under cold water in a strainer to cool them down.

In a large mixing bowl, combine the cooled noodles with the purple cabbage, carrots, bell peppers, edamame beans, fresh cilantro, and cashews.

Dressing and Assembly

In a small bowl, whisk together the zest and juice of one orange, olive oil, honey, salt, and pepper to create a tangy dressing. Drizzle the dressing over the noodle and vegetable mixture, tossing gently to combine and coat everything evenly.

Serving
