Roasted Beet and Orange Salad

This Roasted Beet and Orange Salad is a burst of colors and flavors that always puts me in a good mood. The combination of earthy roasted beets, sweet oranges, and tangy dressing creates a refreshing and satisfying dish perfect for any occasion.

Ingredients:

  • 3 medium beets, peeled and cubed
  • 2 oranges, peeled and sliced
  • 100g mixed greens
  • 50g feta cheese, crumbled
  • 50g walnuts, toasted
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • Salt and pepper to taste
