Unique Dessert Recipe: Lavender Honey Peach Galette

Today, I’m sharing a special dessert that always reminds me of lazy summer afternoons spent in my grandmother’s garden. This lavender honey peach galette is a delightful combination of fragrant lavender, sweet honey, and juicy peaches, all wrapped up in a rustic pastry crust. It’s a perfect way to celebrate the flavors of the season and impress your guests with a unique and delicious dessert.

Ingredients:

  • 250g all-purpose flour
  • 50g sugar
  • 1/2 tsp salt
  • 150g cold butter, diced
  • 6-8 tbsp ice water
  • 4 ripe peaches, sliced
  • 1 tbsp dried lavender buds
  • 3 tbsp honey
  • 1 egg, beaten

To make the galette dough, mix the flour, sugar, and salt in a bowl. Add the cold, diced butter and use your fingers to rub it into the flour mixture until it resembles coarse crumbs. Gradually add the ice water, 1 tablespoon at a time, until the dough comes together. Shape it into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Preheat your oven to 375°F (190°C). On a floured surface, roll out the dough into a rough circle about 12 inches in diameter. Transfer it to a baking sheet lined with parchment paper. Arrange the peach slices in the center of the dough, leaving a border around the edges. Sprinkle the lavender buds over the peaches and drizzle the honey on top.

Fold the edges of the dough over the peaches, pleating it as you go. Brush the pastry with the beaten egg for a golden finish. Bake the galette for 35-40 minutes, until the crust is golden brown and the peaches are tender.

Once cooled, slice the galette into portions. This dessert weighs approximately 900g in total, serves 8 people, with each serving weighing around 113g. Each serving is estimated to be around 250 calories.

One unique tip for this recipe is to sprinkle a little extra sugar on the crust before baking for a sweet, crunchy finish.
