Unique Dessert Recipe: Whimsical Watermelon Tart

As the summer heat begins to fade and the first hints of autumn start to appear, I find myself craving light and refreshing desserts that capture the essence of the season. Today, I’m excited to share with you my recipe for a whimsical watermelon tart – a unique twist on a classic fruit tart that is sure to delight your taste buds and brighten your day.

Ingredients

  • 1 small watermelon (seedless), diced (approximately 500g)
  • 200ml coconut milk
  • 10g agar agar powder
  • 50g honey
  • 1 tsp vanilla extract
  • a pinch of salt
  • 50g pistachios, chopped

Kitchen Tools

  • blender
  • tart pan

To start, combine the diced watermelon, coconut milk, honey, vanilla extract, and salt in a blender. Blend until smooth and then pour the mixture into a saucepan. Sprinkle the agar agar powder over the mixture and bring it to a gentle simmer over medium heat. Allow the mixture to simmer for 2-3 minutes, stirring constantly until the agar agar is fully dissolved.

Once the mixture has thickened slightly, remove it from the heat and pour it into a tart pan, spreading it evenly to form the base of the tart. Place the tart in the refrigerator to set for at least 1-2 hours.

While the tart base is setting, toast the chopped pistachios in a dry pan over medium heat until lightly golden and fragrant. Allow them to cool before sprinkling them over the set tart base.

Once the tart is fully set and the pistachios are in place, carefully remove it from the tart pan and slice it into wedges. Serve chilled and enjoy the refreshing flavors of the watermelon tart with a hint of coconut and a crunch of pistachios.

Serving

This whimsical watermelon tart weighs approximately 800g after cooking and serves 8 people. Each serving is around 100g and has an estimated calorie count of 150. For an extra touch of sweetness, drizzle with a bit of honey before serving.
