Today’s Special: Spicy Mango Coconut Tofu Stir-Fry

Greetings, foodies! Today, I’m excited to share a mouthwatering recipe that perfectly blends sweet, spicy, and savory flavors for a truly unique dish. This Spicy Mango Coconut Tofu Stir-Fry is a delightful mix of textures and tastes that will take your taste buds on a culinary adventure.

Ingredients:

  • extra-firm tofu (350g, cubed)
  • mango (1, peeled and diced)
  • coconut milk (200ml)
  • red bell pepper (1, sliced)
  • onion (1, sliced)
  • garlic (3 cloves, minced)
  • ginger (1 tbsp, grated)
  • chili flakes (1 tsp)
  • soy sauce (2 tbsp)
  • vegetable oil (2 tbsp)
  • salt and pepper to taste
  • fresh cilantro (for garnish)

Kitchen Tools:

  • chef’s knife
  • cutting board
  • wok
  • wooden spoon
  • grater
  • measuring spoons

To start, heat vegetable oil in a wok over medium heat. Add minced garlic, grated ginger, and chili flakes, and sauté for a minute until fragrant. Next, add sliced onion and red bell pepper, stirring occasionally until they begin to soften.

Push the vegetables to one side of the wok and add cubed tofu to the empty space. Pan-fry the tofu until golden brown on all sides, then combine with the vegetables in the wok. Pour in the coconut milk and soy sauce, stirring well to coat everything in the flavorful sauce.

Gently fold in the diced mango, being careful not to break it apart. Let the stir-fry simmer for a few minutes to allow the flavors to meld together. Season with salt and pepper to taste, adjusting the spice level if needed.

Once everything is heated through and well combined, remove the wok from the heat. Serve the Spicy Mango Coconut Tofu Stir-Fry hot, garnished with fresh cilantro for a burst of freshness.

This exotic dish weighs approximately 900 grams once cooked and serves 4 hungry diners. Each serving clocks in at around 225 grams, boasting a calorie count of 320 per portion.

Pro tip: For an extra burst of citrus flavor, add a splash of lime juice to the stir-fry just before serving. The acidity will brighten up the dish and take it to the next level!

I hope you enjoy preparing and devouring this Spicy Mango Coconut Tofu Stir-Fry as much as I do. Don’t be afraid to get creative and make it your own by adjusting the ingredients to suit your preferences. Happy cooking!
