Ingredients:

  • bell peppers (4 large)
  • lentils (200g)
  • onion (1 medium)
  • tomatoes (2 medium)
  • garlic (2 cloves)
  • cumin powder (1 tsp)
  • coriander powder (1 tsp)
  • paprika (1/2 tsp)
  • salt and pepper to taste
  • olive oil for cooking

To start, preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. In a saucepan, cook the lentils according to package instructions until tender.

Meanwhile, heat some olive oil in a pan over medium heat. Add chopped onions and garlic, and sauté until fragrant. Dice the tomatoes and add them to the pan along with cumin, coriander, paprika, salt, and pepper. Cook until the tomatoes break down and the mixture thickens.

Once the lentils are cooked, add them to the tomato mixture and stir well to combine. Fill each bell pepper with the lentil mixture and place them in a baking dish. Bake in the oven for about 25-30 minutes, or until the peppers are tender.
