Wholesome Autumn Stew Recipe: A Flavorful Fall Delight

Delicious Autumn Stew

As the leaves start to change colors and the air turns crisp, I find myself craving warm, comforting meals that evoke the essence of fall. Today, I’m excited to share my recipe for a delicious autumn stew that combines unexpected flavors to create a hearty and satisfying dish.

Ingredients:

  • butternut squash (500g, peeled and diced)
  • lamb shank (800g, bone-in)
  • cannellini beans (400g, cooked)
  • fennel bulb (200g, sliced)
  • dried apricots (100g, chopped)
  • harissa paste (2 tbsp)
  • chicken broth (1 liter)
  • olive oil (2 tbsp)
  • salt and pepper to taste

Kitchen Tools:

  • chef’s knife
  • cutting board
  • large pot
  • wooden spoon

To start, heat olive oil in a large pot over medium heat. Add the lamb shank and sear on all sides until browned. Remove the lamb from the pot and set it aside.

In the same pot, add the sliced fennel and sauté until softened. Then, stir in the harissa paste and cook for another minute to release the flavors. Return the lamb shank to the pot and add the diced butternut squash, chopped dried apricots, and cooked cannellini beans.

Pour in the chicken broth, season with salt and pepper, and bring the stew to a boil. Reduce the heat to low, cover the pot, and simmer for 2-3 hours until the lamb is tender and falling off the bone.

Once the stew is ready, remove the lamb shank from the pot and shred the meat using two forks. Return the shredded meat to the stew and stir to combine all the ingredients. Adjust the seasoning if needed.

Serve the autumn stew hot in bowls, garnished with fresh herbs or a dollop of yogurt for extra creaminess. This flavorful dish pairs well with crusty bread or a side salad for a complete meal.
