Ingredients:

  • 4 medium red bell peppers
  • 1 cup quinoa
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup cherry tomatoes, quartered
  • 1 ripe avocado, diced
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

While the peppers are roasting, cook the quinoa according to the package instructions in a saucepan. Once cooked, fluff the quinoa with a fork and transfer it to a large mixing bowl.

Add the black beans, corn kernels, cherry tomatoes, diced avocado, lime juice, chopped cilantro, olive oil, salt, and pepper to the bowl with the quinoa. Mix everything together until well combined.

Remove the peppers from the oven and carefully stuff them with the quinoa mixture. Return the stuffed peppers to the oven and bake for an additional 15-20 minutes until the peppers are tender.

Once cooked, remove the peppers from the oven and let them cool slightly before serving. Garnish with extra cilantro or a slice of lime if desired.

This recipe makes 4 servings, with each stuffed bell pepper weighing approximately 300 grams. One serving is around 350 calories.

One unique tip for this dish is to sprinkle some crumbled feta cheese on top of the stuffed peppers before baking for an extra burst of flavor.
