Wholesome Harvest Stuffed Squash

Hey there, foodies! Today, I’m excited to share with you my recipe for Wholesome Harvest Stuffed Squash. As we transition into the cozy fall season, I love experimenting with hearty and nutritious dishes that celebrate the abundance of autumn produce. This recipe is a perfect way to enjoy the flavors of the season in a comforting and satisfying meal.

Ingredients:

  • 1 butternut squash (medium-sized)
  • 1 cup quinoa
  • 1/2 cup walnuts, chopped
  • 1/4 cup dried cranberries
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • Salt and pepper, to taste

Kitchen Tools:

  • chef’s knife
  • cutting board
  • baking sheet
  • large pot
  • wooden spoon
  • oven

To start, preheat your oven to 400°F (200°C). Cut the butternut squash in half lengthwise and scoop out the seeds. Place the squash halves cut side down on a baking sheet and roast in the oven for about 45-50 minutes, or until tender.

While the squash is roasting, rinse the quinoa under cold water to remove any bitterness. In a large pot, sauté the diced onion and minced garlic until fragrant. Add the quinoa, vegetable broth, cinnamon, nutmeg, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the quinoa is cooked and fluffy.

Once the quinoa is ready, stir in the chopped walnuts and dried cranberries. Remove the roasted squash from the oven and carefully flip them over. Fill each squash half with the quinoa mixture, packing it down lightly.

Return the squash to the oven and bake for an additional 10-15 minutes until everything is heated through. Serve the Wholesome Harvest Stuffed Squash warm, garnished with a sprinkle of extra cinnamon, if desired.

This recipe makes approximately 4 servings, with each serving weighing around 400 grams. One serving of this dish is approximately 350 calories.

And here’s a tip to make this dish even more flavorful: before roasting the squash, brush the cut sides with a mixture of maple syrup and olive oil for a sweet and caramelized finish. Enjoy this delicious and nutritious meal, and don’t be afraid to get creative with your own twist on it!
