  • 1 butternut squash (medium-sized)
  • 1 cup quinoa
  • 1/2 cup walnuts, chopped
  • 1/4 cup dried cranberries
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • Salt and pepper, to taste

To start, preheat your oven to 400°F (200°C). Cut the butternut squash in half lengthwise and scoop out the seeds. Place the squash halves cut side down on a baking sheet and roast in the oven for about 45-50 minutes, or until tender.

While the squash is roasting, rinse the quinoa under cold water to remove any bitterness. In a large pot, sauté the diced onion and minced garlic until fragrant. Add the quinoa, vegetable broth, cinnamon, nutmeg, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the quinoa is cooked and fluffy.

Once the quinoa is ready, stir in the chopped walnuts and dried cranberries. Remove the roasted squash from the oven and carefully flip them over. Fill each squash half with the quinoa mixture, packing it down lightly.

Return the squash to the oven and bake for an additional 10-15 minutes until everything is heated through. Serve the Wholesome Harvest Stuffed Squash warm, garnished with a sprinkle of extra cinnamon, if desired.
