These quinoa-stuffed bell peppers are not only delicious but also packed with wholesome ingredients that will leave you feeling satisfied and nourished. Let’s dive into the recipe!

Ingredients:

  • 4 medium red bell peppers
  • 1 cup quinoa
  • 1 can (400g) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup cherry tomatoes, diced
  • 100g feta cheese, crumbled
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1 tsp cumin
  • 1 tsp paprika
  • to taste

Start by preheating your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place the bell peppers upright in a baking dish.

Rinse the quinoa in a fine-mesh strainer under cold water. In a medium saucepan, combine the quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed.

In a mixing bowl, combine the cooked quinoa, black beans, corn, cherry tomatoes, feta cheese, cilantro, lime juice, cumin, paprika, salt, and pepper. Mix until well combined.

Spoon the quinoa mixture into each bell pepper, packing it down gently. Place the filled bell peppers in the baking dish and cover with foil. Bake in the preheated oven for 25-30 minutes, until the bell peppers are tender.

Remove foil and bake for an additional 5-10 minutes, until the tops are slightly browned. Serve hot and enjoy the delicious combination of flavors!
