Today’s Unique Dish: Citrus-infused Lobster Risotto

Hey there, foodies! Today, I want to share with you my latest culinary creation: a mouthwatering citrus-infused lobster risotto. The inspiration for this dish comes from the warm summer days and the desire to combine the freshness of citrus with the rich flavors of lobster. Trust me, this unique combination is bound to impress your taste buds!

Ingredients:

  • Arborio rice (300g)
  • Lobster tail (2 tails, 200g each)
  • Lemon (1, zest and juice)
  • Orange (1, zest and juice)
  • Vegetable broth (1 liter)
  • Shallot (1, finely chopped)
  • Garlic cloves (2, minced)
  • Butter (50g)
  • Parmesan cheese (50g, grated)
  • Chives (for garnish)

To start, cook the lobster tails in boiling water for about 8-10 minutes until they turn bright red. Once cooked, remove the meat from the shells and chop it into bite-sized pieces. Set aside.

In a large saucepan, melt the butter over medium heat. Add the shallot and garlic, cooking until softened. Stir in the Arborio rice and cook for another 2-3 minutes until translucent. Add the vegetable broth one ladle at a time, stirring constantly until the rice is creamy and al dente, about 18-20 minutes.

Next, add the chopped lobster meat, lemon zest, orange zest, lemon juice, and orange juice to the risotto. Stir well to combine and let it simmer for another 2-3 minutes. Remove from heat and stir in the Parmesan cheese until melted and incorporated.

Serve the citrus-infused lobster risotto hot, garnished with chopped chives for a pop of freshness.

The total weight of the cooked dish is approximately 1200g, with 4 servings at 300g each. Each serving is around 450 calories.

One unique tip for this recipe is to add a splash of white wine to the risotto just before serving to enhance the citrus flavors and elevate the dish even further.
