Today, I’m excited to share my recipe for Lemon-Basil Spaghetti Squash, a refreshing and satisfying meal that’s perfect for spring or summer. The zesty lemon and aromatic basil make this dish a stand-out, and the spaghetti squash adds a unique twist to a classic pasta dish.

Ingredients:

  • 1 medium spaghetti squash (about 1.5 kg)
  • 3 tbsp olive oil
  • 3 cloves of garlic, minced
  • Zest of 1 lemon
  • 1/2 cup fresh basil, chopped
  • Salt and pepper to taste

Start by preheating your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with olive oil and season with salt and pepper. Place the squash halves cut-side down on a baking sheet and roast in the oven for about 40-45 minutes, or until the flesh is tender and easily pierced with a fork.

While the squash is roasting, heat the remaining olive oil in a skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Remove from heat and set aside.

Once the squash is done, use a fork to scrape out the flesh into a large bowl. The strands should resemble spaghetti noodles. Add the garlic and olive oil mixture, lemon zest, and chopped basil to the bowl. Toss everything together until well combined.

Serve the Lemon-Basil Spaghetti Squash warm, garnished with additional fresh basil and a sprinkle of lemon zest. This dish is best enjoyed fresh and pairs well with a crisp white wine.
