Zesty Mediterranean Stuffed Peppers: A Flavorful Culinary Journey

Today’s Culinary Adventure: Mediterranean Stuffed Peppers

As the weather starts to warm up, I find myself craving fresh and vibrant flavors in my cooking. Today, I’m excited to share with you my recipe for Mediterranean stuffed peppers. This dish is a perfect balance of savory, tangy, and aromatic flavors that will transport you straight to the shores of the Mediterranean.

For this recipe, you will need the following ingredients:

  • 4 medium red bell peppers
  • 1 cup quinoa (cooked)
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped kalamata olives
  • 1/2 small red onion (finely chopped)
  • 1/4 cup chopped fresh parsley
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • Salt and pepper to taste

To prepare this dish, you will need the following kitchen tools:

  • chef’s knife
  • cutting board
  • mixing bowl
  • baking dish
  • oven

Start by preheating your oven to 375°F (190°C). Cut the tops off the red bell peppers and remove the seeds and membranes. Place the peppers in a baking dish and set aside.

In a mixing bowl, combine the cooked quinoa, cherry tomatoes, feta cheese, kalamata olives, red onion, fresh parsley, lemon juice, olive oil, salt, and pepper. Mix everything together until well combined.

Stuff each red bell pepper with the quinoa mixture, pressing down gently to pack in the filling. Place the tops back on the peppers.

Bake the stuffed peppers in the preheated oven for 30-35 minutes, or until the peppers are tender. The filling should be heated through and the cheese slightly melted.

Once cooked, remove the stuffed peppers from the oven and let them cool for a few minutes before serving. Garnish with extra chopped parsley and a drizzle of olive oil, if desired.

This recipe makes 4 servings, with each stuffed pepper weighing approximately 300g. One serving of these Mediterranean stuffed peppers is around 250 calories.

One clever tip for this dish is to add a sprinkle of za’atar spice blend to the quinoa mixture before stuffing the peppers. This will add an extra layer of flavor and a hint of Middle Eastern flair to the dish.
