  • Chicken or vegetable broth (1 liter)
  • Butter (50g)
  • Onion (1, finely chopped)
  • Ruby red grapefruit (2, juiced and zested)
  • Parmesan cheese (100g, grated)
  • Salt (to taste)
  • Black pepper (to taste)

To begin, heat the chicken or vegetable broth in a pot over medium heat until simmering. In another pot, melt the butter and sauté the finely chopped onion until translucent. Add the Arborio rice to the pot and toast it for a minute until slightly translucent.
